   THRACIAN SITES
About two-thirds of the former empire of Thrace now lies on territory belonging to Bulgaria. An area of great prosperity, Thrace must have derived part of its wealth from its metal deposits still in use more than 3000 years after the world's first goldwork at Varna. The past glory of Thrace is only beginning to unfold as archaeologists uncover clues from the ancient graves marked by huge mounds that dot the landscape. These newly explored sites reveal a people of extraordinary sophistication, whose quality metalwork is breathtakingly beautiful.

Bulgarian Cuisine has grown out of wealth of culinary traditions, both local and foreign, combined in a way which is uniquely Bulgarian, offering dishes with their own characteristics, originality and exceptional variety. You should certainly try the best yogurt produced in the world, banitza (baked cheese pastry), kavarma kebap - one of the most typical and delicious Bulgarian dishes, bjurek (cheese stuffed peppers) or shopska salad - a Bulgarian favourite. Be sure to have a glass or two of Bulgarian excellent quality wine as well.
